 Irish Celery Stew


 This is long been a favorite but please read the notes posted below as well; 🙂

Irish Celery Stew-
1 Stalk of celery chopped
3-4 potatoes (red and golden supposedly are lower in starch) chopped
1-2 carrots chopped
1/2 – 1 onion chopped
4 cups of chicken broth
1-2 cloves of garlic OR 2TBSP of Garlic
1-2 bay leaves
3-4TBSP of butter

In a sauce pan (get a nice big one) or a dutch oven (wish I had one! ;)) melt the butter and add the veggies, onion, and garlic and saute for approx 5-10 minutes.  Add the chicken broth, bay leaf(ves), salt and pepper.  place on low-Med. heat for 20 minutes- 40 minutes.  Veggies should be soft not mushy. 

Puree the soup.  I usually but one ladel of soup in the blender.   Be careful.  Since its hot it could push the lid off… ask me how i know.  So typically you should have just enough broth to help with the veggies but it shouldnt cover them. 

This is a very low calorie dish, if eaten alone, you could get VERY hungry soon after.   Best served with some sort of protein.  We usually add some cilantro, and cottage cheese in our soup.  Typically your suppose to use sour cream, but we’re not big fans of that.   Its also really good served with italian sausage or ham.
